I made these again! And this time I PULSED the breadcrumbs and Parmesan cheese together in the food processor and next time I plan on doing the same thing with the seasonings in it too! It turned out much nicer and more consistent! I also used olive oil instead of butter and have to say that it was still good however butter gave it a little bit extra flavor that was a little bit better. But on the healthier side it was still good with Olive Oil! The Potatoes are so yummy. My great-great aunt gave me the recipe several years ago and we really like them...
Pan Baked Potatoes
2 to 2 1/2 pounds red potatoes, scrubbed & cut into pieces (russet work well also) Boil for 5 minutes in salted water.
In small bowl mix:
1/4 cup olive oil
4 cloves of garlic (I just use garlic salt since you need salt too)
1 tablespoon thyme or 2 tsp. ground pepper
salt & 2 tsp ground Italian seasoning
Spread potato chunks onto a cookie sheet and drizzle olive oil mixture over top. Bake in 375 degree oven for 25 minutes or until slightly browned. Stir often to spread dressing!
