Long day...

This is just a little collage of the kids from yesterday!

Girl’s night was fun and we got a lot accomplished and I’m SOOO tired, I'll post some pictures of my layouts tomorrow! I got home at 4:30am… Joe let me sleep until just before 10:00 so I could watch President Hinckley’s Funeral. So about 5 hours of sleep by the time I finally got to bed. We don’t have cable or satellite so we thought we were going to have to just watch it online but it turns out one of the Idaho channels that we get from the antenna was broadcasting it. They did such a fine job with everything. I loved all of the stories shared and the uplifting and positive feelings. I’ve been to some funerals where there is a lot of uncertainty and total despair. Knowing that we’ll see this wonderful man and other family member who have gone before us is such a wonderful blessing and I’m so grateful for that knowledge.

I made 6 loaves of bread today. This is a picture of my “wheat” bread. I only use 1 cup of wheat out of the 6 but it’s nice to know that I’m finally using some of the wheat that I have had in storage and the bread still tastes SOOO wonderful. It’s light, fluffy and still very tasty! I also FINALLY made Joe’s Butternut Squash Bake that he’s been wanting me to make since Christmas time. I’ve had this squash in the fridge for a month. I was so surprised that it lasted that long. It turned out so great. Emma isn’t a fan of it but the 3 little ones couldn’t get enough, I love it and Joe realllllly loves it. This is my mom’s recipe she has made it many times and every time it wonderful! Very easy to make as well…

Butternut Squash Bake
1/3 cup butter or margarine, softened
¾ cup sugar
2 eggs
1 can (5 ounces) evaporated milk
1 teaspoon vanilla extract
2 cups mashed, cooked butternut squash

Topping:
½ cup crisp rice cereal
¼ cup packed brown sugar
½ cup chopped pecans
2 tablespoons butter or margarine, melted

In a mixing bowl, cream butter and sugar. Beat in eggs, milk and vanilla. Stir in squash (mixture will be thin). Pour into a greased 11” x 7” x 2” baking pan. Bake, uncovered, at 350 degrees for 45 minutes or until almost set. Combine topping ingredients; sprinkle over casserole. Return to the oven for 5-10 minutes or until bubbly.

Yield: 6-8 servings

Just a side note I doubled the topping and it was really good. I think that’s one of the best parts of the whole recipe!!! Oh and to cook your squash you can do it in the microwave. Cut your squash in half lengthwise, scrape out the insides and make sure to get all the strings out. Cover squash tightly with plastic wrap. Place in the microwave and cook on high for 10 minutes or until tender. Let sit for 5 to 10 minutes and then scrape out the insides and mash it up! Just be careful when you take off the plastic wrap!

I love home made bread-yum.
I watched the funeral all morning too. i couldn't get enough, i just wanted to learn more and more about him, I din't want the documentary the KSL broadcasted to end. i loved that man and never even met him.

I always love pictures of the kids, cute.
But pictures of breads and cakes makes me sad, since I can only see the pictures.... ;)

Bread YES! Can't do the squash though, Lloyd would love it he loves all things squash.

That's so great you love to cook! The bread does look good. My mother in law just fixed us butternut squash this weekend, and it was yummy! I need to get some and try it out.

Hey, that Idaho news station that broadcasted the funeral was probably the station my husband works at! He works at KTVB channel 7.
