Bourbon Chicken & Rice

This is so yummy! The original version comes from recipezaar.com but I've change several things... The kids gobbled it up. At first L said, "I don't want chicken" like 10 times. But I made him have some anyway and after a couple of bites he was saying, "Ummm thanks mommy at's good" So at least it passed the test for him! It's so easy to make which is the way I like to cook. The worst part is cutting the raw chicken which I HATE, but Joe did it for me last night. YEAH!!! :) One nice thing is that after you get it all together it needs to simmer for 20 minutes and that's the perfect time to make your rice and have simmer at the same time. It's called Bourbon Chicken but don't worry there isn't any in there. I think they call it that because it has the same color? At least I think it's about that color. Who knows...


Bourbon Chicken (Mel's version)


Ingredients:

2 lbs boneless chicken breasts, cut into bite size pieces
1-2 tablespoon olive oil
2 tablespoons of minced garlic
1/2 teaspoon ginger
1 teaspoon cayenne pepper
1/2 cup apple juice
2/3 cup light brown sugar
4 tablespoons ketchup
2 1/2 tablespoon cider vinegar
1 cup water
2/3 cup soy sauce
1/2 cup cornstarch mixed with 1/2 cup of water


Directions: Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove Chicken. Mix remaining ingredients (except cornstarch mix) in a medium size sauce pan, heating over medium heat until well mixed and dissolved. Add to chicken and add cornstarch mixture, bring to a hard boil. Reduce heat and simmer for 20 minutes. Stir half way through. Serve over hot rice and ENJOY. Serve over hot rice.

Your so brave to try new recipe's. I have to have tasted something before I could make if for myself or others. This recipe sounds really good though.. Maybe someday I'll try it.. Go Melissa!

Sometimes I cut up raw chicken with kitchen scissors. It's a bit less unpleasant.
