Monday night I tried Motherhood for Dummies recipe of Creamy Spinach Rigatoni, however I didn't have any rigatoni so I used the spiral stuff... It was really good. Eliza loved it and so did Olivia. Emma hated the spinach (but she's been overly picky lately) and Lane liked it at first and then started picking off the spinach. Joe hasn't been feeling well so his opinion doesn't count and I thought it was really good and actually tasted better the second day reheated. So if you want to try it you get it off of her website! :) I also took some of my homemade bread and put butter and garlic salt on it and broiled it until it was golden brown oh so yummy!
Then for dessert after Family Home Evening we had Sherelle's Creamy Coconut Cake! Yummy... It was really good. I should have made it earlier in the day though and let it chill before we ate it. It was much better cold! :) You can get the recipe off her website as well.
Last night I made my easy baked chicken where all I do is take a 9x13 pan, spray it with pam, throw in a 16 ounce container of sour cream 2 cans of cream of chicken soup and 3 or 4 tablespoons of lemon juice and then mix it all up. I add my thawed out chicken, I have used frozen chicken too but it makes it a little too watery for my taste. After I lay the chicken on top of the mixture I sprinkle on some garlic salt and pepper then I push the chicken under the mixture so it's all covered and bake it at 350 for about 1/2 hour or so... If you put this over rice it's very tasty. I've also put it over pasta and it's just as good. I made extra rice on purpose so that I could make rice pudding. YUMMMM! It was so good. We all love it. All I do is leave the rice in the bowl that I cooked it in then add enough milk to cover the rice plus a little extra (I also added in the extra bit of coconut milk from that cake above or you can also use left over canned milk if you need to use it up as well) add in some sugar and vanilla bring it to a boil and then simmer for about 10 minutes until it thickens up a bit and it's done!!! SO good! You can add raisins also I didn't have any though. Joe doesn't like the raisins but the kids & I do!
This morning Olivia yelled at me and Joe doesn't allow that AT ALL and the kids know so all he said was, "OH BOYYYY" and Olivia yells, "I'm NOT A BOY!!!" I couldn't help but laugh!

growing up when ever we had rice for dinner we would have a bowl of rice for dessert with milk and sugar and cinnamon on it (I guess thats the single dads way to make rice pudding. hehe) it was yummy that easy way also, I have not done that since I lived at home. I am going to try all those recipes, they sound good.
I keep waiting for a dinner invite....
