Potato Soup

I love Emma's hair in little piggies at the back of her head... This isn't a very good picture but you can kind of see them...

Olivia fell asleep on Joe yesterday evening. Certainly the no nap couldn't have had anything to do with that! She was a little stinker and wouldn't go to sleep. Lane finally fell asleep even with her talking and playing but she woke him up and that made his cranky for the rest of the day and Eliza's screaming didn't help him sleep either!

Eliza decided she wanted to go outside with Emma in the back yard but she could only find one glove. She came inside crying and holding her ungloved hand up. I asked her if her hands were cold and she held up the gloved one and said, "not this one, only this one"... I felt it and it was like a stinking ice cube. She lied down on the couch coat and boots still on and a blanket and warmed up. She decided she was happy to stay inside after that.

YUmmmmm....Yummy Potato Soup


This is Joe's mom's recipe it's soooo good. My kids LOVE it and it's so easy to make. I like it with hamburger in it as long as the grease is drained really well. I don't use a recipe really for this it's just peel a bunch of potatoes until the large pot is 1/2 to 3/4 full and then boil in salted water until soft. Drain. Put milk in the pot that you boiled the potatoes in. I fill the pot about 1/3 to 1/2 way with milk and then add a cornstarch slurry, about 1/2 cup of cornstarch and then 1/2 cup water until mixed. Bring to an "almost" boil and then add a bunch of cheese (Colby is the best for the nice creamy texture, medium cheddar taste good but the texture isn't smooth)!!! I usually add like 1 lb or 1 1/2 lbs... When it's completely melted add your seasoned cooked ground beef (or you can leave it out) and potatoes. It's also really good with broccoli... Stir together and serve. We love it in bread bowls. YUMMY. I usually do all of the cooking on medium-high because I am very impatient but I have to continually stir it so that it doesn't scorch.

Ack! I see a trip to Panera in my future for soup. Either that or a trip to the grocery for potatoes!!

yummmm......I love hearty soups. I wonder if it would be good with chicken, too?

I've never tried it with chicken. But it's a pretty neutral flavor I'm sure it would taste good. If you ever try it you'll have to let me know how it tastes...

Oh and Melissa, I blame you for my trip to Panera...;) Next time I'll just go to your house for soup. It can't be any more difficult than what I went thru here. ;)
