Okay you have to like stuffing to like this recipe but it's so good. I got this recipe from my mother-in-law. I love it and the kids LOVE it. I've adapted it a little bit to make it even easier cause I'm all about the quick meal. So here it is... This one's for you Jeanne...
Chicken Stuffing Casserole2 pkg's of stuffing
2 cans of cream of chicken soup
1 small container of sour cream
1-2 lbs of chicken depending on how much you like
Follow the instruction on the box of stuffing. Cube up your cooked chicken. Put the soup & sour cream in a sauce pan and heat it up. Add your chicken & stuffing while it's still hot.
Voila! You're done. I like to boil my chicken (make sure to add salt to it though so it doesn't taste gamie) while it's still frozen cause I'm lazy and hate defrosting or don't think about making it until it's dinner time and don't want to take an extra 20 minutes to defrost it. It's very good. Another variation the way my mother-in-law makes it is by dicing up your raw chicken and putting it in the bottom of a 9x13 pan and then put the stuffing over the raw chicken and then cream all the other stuff together and pour that over the stuffing and bake it for I don't remember how long. But again I'm into the quick fix. So if you're interested in the other recipe I can get it from her and post it just let me know...
As far as our day at the house...CRAP...Kids were crazy today. I put them outside and when they came in I had to give them all a bath they were nasty and covered in dirt. Then while I was bathing them Eliza touched me with her NASTY hands on my white shirt. Thanks Eliza. So I'd had it by then, fed them and put them to bed. Eliza was the first to wake up and while I was busy she decided to get into my ink pads and she covered both hands with blue ink. Then decided it would be fun to paint the wall with it. So I had little Eliza hand prints on my wall and my tool box that I keep all that stuff in was painted at least the top part was. Luckily I caught it before it dried and it was relatively easy to get off. Then Lane & Olivia got up and Olivia snuck the butter into her bedroom and was eating it. While eating it she got it in her hair and all over her face. She looked like a hormonal teenager with a greasy face. NASTY. So O got another bath and got her hair scrubbed AGAIN!!! L was my calmest today. There was of course the usually fighting and hitting. He went in the corner only once for throwing a toy at Eliza's head.
That was my day lovely as usual. Now we're off for our annual family reunion! I still haven't found anyone to take my place in nursery either. Guess I should get on top of that...

I'd love the casserole style recipe, there's just something about a baked crust that I love. Sorry about your day, hopefully today will be better!
Oh my goodness, that last paragraph was like something out of a movie. I had to read it out loud to my husband because it's unbelievable what kids get into!
