Last night was raspberry jam night. It smelled SOOO good and looks so pretty with the dark red!
I still need to can about 40 lbs of these...
and tonight we're going to go pick more apples and some corn. I still have tomatoes I need to can or do something with? Not sure yet what to do, any ideas? The rest of this week will be a not so fun canning week as I'm sure next week will be too (I'd rather do freezer stuff it's so much faster and easier)...

you can do that thing where you put the tomatoes in hot water so the skins come off (I'm brain dead) then you can put them in freezer bags and freeze them to use for spag sauce or chili ect. its a fast way
I made tomato sauce for the first time this year. It was really easy you don't have to peel and seed them (at least with the recipe I used)!
What Kelli says. We do that every year with our tomatoes. I also tend to can home made spaghetti sauce (with ground beef), both in a jar and to freeze.
Good luck with all your canning! On Monday & Tuesday Carol and I canned 147 quarts of stew! Now today I'm canning apple cider.
I'm so sick of canning.
BUT i have finished all my peaches, beans, apple sauce, apple pie filling & stew. This so better be worth it come winter. :)
Oh and I forgot about my relish it's done too!
I did Raspberry jam earlier this summer and it turned out so yummy! I only got 12 small jars and I wish I had more cause I am devoring it like crazy!
You could make salsa, but that is probably more work than you want to do and I don't know any recipes!
Good luck!
You are the queen! My Grandma was just saying today she had tomatoes she didn't know what to do with either. I'm going to get some of her peaches and raspberries and try making jam at the beginning of next week :)
I just canned a bunch of salsa, getting ready to do pomegranite jelly. I would love to get some apples and wish I had corn to do. Love your site!
Ciao!
